When you are carving or cutting anything always use the right knife for the job. And make certain it is sharp. There is nothing more dangerous and more likely to do a bad job than a dull knife. When cutting vegetables use the French carving knife or a cleaver, sharpen it each time you use it and place tip of knife on the cutting board and rock your wrist down in controlled cuts. Carefully advance the vegetable under the cuts for nicely even thin slices and if you want to chop in smaller pieces do same cutting motion but move blade over the spread out slices of vegetables. The size of the pieces can be any size you want. This technique is fast safe and controlled.

You will be able to do this quite rapidly and professionally with a little practice. It is very safe and controlled as long as you keep the tip of the French cutlery knife or cleaver on the cutting board and rock your knife down with a wrist action. Be careful as you get to the end of the vegetable as you advance it under the knife. For the chopping have one hand on the handle and one on the dull side of the blade and chop away. Keep the knife edges sharp at all times. You can do the same chopping for nuts as well. Having the base of the stainless steel blade continue the full length of the handle with forged 3 rivet design will keep it from loosening over time. Have fun cooking.
